The Maker's Diet
The Maker's Diet
After nutritional consultant Rubin (Patient Heal Thyself; etc.) nearly died from an inflammatory bowel disease that caused him to lose 50 pounds and suffer severe pains, he devised an approach to health that combines wholesome eating with a heavy dose of faith. Indeed, while Rubin presents scientific evidence of his plan's effectiveness and detailed lists of recommended supplements and foods, the diet's religious aspect is fundamental. The 28-year-old Rubin bases his diet on a "Biblically-correct lifestyle," recommending the consumption of organically grown foods and frequently referring to the Bible on matters ranging from personal hygiene ("If the Maker has a preference, it might be the use of ritual bathing that combined bathing... with sprinkling") to getting tattoos ("Scripture warns against piercing the skin"). To help readers avoid disease and live healthily, Rubin lays out a three-stage plan. The first stage-somewhat restrictive, akin to South Beach-prohibits virtually all commercial dairy products, chlorinated tap water, many fats and oils, and all carbohydrates ("While it is true that the people of the Bible consumed a diet that contained liberal amounts of... carbohydrate foods, they were higher-quality, lesser-processed carbohydrates, therefore much easier to digest"). More foods are introduced in subsequent weeks, and those following the diet may eventually incorporate red meat, carbs and saturated fats into their regimens.

Am I Thin Yet?

by Jacqueline Seewald   9/27/05

The late Duchess of Windsor, Wallace Simpson, was quoted as saying that you can never be too rich or too thin. I don't know that I agree with her opinion, but then again, she did live to the ripe old age of ninety and was married to royalty. So I figure she must have done something right.

In spite of the fact that there are a gazillion jokes making fun of fat people, one thing is certain: being fat is no laughing matter. No one really wants to be fat. I certainly don't! Every article I've read on the subject reminds me that being overweight contributes to heart disease, diabetes, and many forms of cancer. (Shudder!)

Every time I check out at the supermarket, there's a gaggle of magazines with lead article titles like: "I lost a hundred pounds in a month and didn't have to diet or exercise." You know every woman is going to want to read that article! I don't know how honest these articles are but I have to admit, it's a terrific way to sell magazines.

We Americans are definitely fixated on losing weight, and most particularly, American women. Check it out: The most popular nonfiction bestsellers are diet books. It seems like everyone I know is on a diet. As a flash from the past, I recall the grapefruit diet and the egg diet among others, not to mention the ice cream diet (which is my favorite). Atkins, South Beach, Weight Watchers, Jenny Craig, you name it, someone I know is following one or another. Do these diets work? Some do, some don't. Some are definitely better than others. It's not usually a problem of losing the initial weight; it's more a matter of not regaining lost weight, of maintaining.

Fad diets in particular can actually be dangerous to overall health. A friend of mine was serving beef, butter, bacon and other forms of the fatty food she and her husband love to eat. I questioned the sense of it, but she insisted that by giving up carbs like bread and potatoes they were actually losing lots of weight. Her so-called fat-burning diet denied carbs but allowed high fat consumption. Trouble was, down the line, my friend's husband suffered a heart attack. There's also the case of one of my older son's friends who thought he could lose weight fast by taking "supplement" pills. He suffered a heart attack in his twenties.

The 2005 Dietary Guidelines for Americans were issued on January 12, 2005. They are chock full of useful information. Look them up on the Internet: (http://www.healthierus.gov/dietaryguidelines). The answer to maintaining a healthy weight may also be found in a new book entitled The Volumetrics Eating Plan by Professor Barbara Rolls. Her research at Pennsylvania State University is ongoing in her kitchen/laboratory. Boiling down her findings, so to speak, to one brief statement: people need to eat more foods containing water and fiber such as fruits, whole grains, legumes and vegetables, so they get a satisfying amount of food and enough calories. This study also observes that people are more likely to lose weight if they avoid snacking on dry, low fat, calorie dense foods, pretzels, crackers or chips. The emphasis is on eating foods with volume. Think soup and salad instead of sandwich. Think fresh fruit instead of raisins or other dry fruits. Get the picture? Seems like common sense. But as Einstein said, common sense is not so common.

In the best-selling book French Women Don't Get Fat by Mireille Guiliano, it's pointed out that French women eat smaller portions; they also take more time to eat less food. They avoid junk food and enjoy indulging in the "real" thing like dark chocolate and wine. Guiliano at 58 is a chic size 6. Again, common sense. Eat less, weigh less. Savor your food. Nothing so new there either but good advice all the same.

It's not just guys who have to worry about heart disease and weight gain. Middle-aged women like myself with slowing metabolism, tend to gain weight. We post-menopausal women collect that weight around the waist. Sure, we can eat less bread, pasta and potatoes, drink extra water, but is that enough to make a difference? Chances are, we need to exercise as well. A lot of women join gyms. Some work out with personal trainers. Some people turn their basements or rec rooms into gyms. But if you're like me and just plain dislike being cooped up in a gym, there are other alternatives. Simply walking at a good pace does wonders. I've even heard Laura Bush recommend it! Myself, I try to do a minimum of thirty to forty minutes of brisk walking each day, rain or shine. I prefer the outdoors but I don't look down my nose on mall walking either, especially in bad weather. Of course, if I'm going to do a mall walk, it's better in the morning before the stores open so I won't be tempted to stop and shop. I also don't want to visit the chocolate store or the fast food places; otherwise, the good I've done my body by walking is totally lost.

Sometimes I walk carrying light weights. I go to the track and alternate walking and jogging. The best part about brisk walking and easy jogging is that it tends to calm my mind, puts me in relaxation mode. I definitely sleep better at night if I've taken a good walk during the day. If I don't have time for a full walk at one time, I might break up the time into two walks at different times of the day. And no, I am not a publicist for the sneaker industry!

I wouldn't mind losing ten pounds. Okay, who am I kidding? Twenty pounds would be better. Facing reality, I know I'm not going to starve myself. But I am trying to eat more sensibly: less fats and carbs, more whole grains, fruits, vegetables, salads and lean protein, in short, a balanced diet. And the time spent walking is time not spent eating. So, am I losing any weight yet? I sure hope so!
